Golden coins

An appetizer made with bread slices covered with a delicious spicy potato filling, coated with an egg wash and then pan fried, topped off with sesame seeds.

Ingredients

  • 8 slices bread
  • cup mixed vegetables of your choice boiled**
  • 6 medium potatoes boiled
  • 1 cup shredded chicken cooked
  • 1 1/2 tsp of salt or to taste
  • 2 tsp crushed red chili flakes
  • 1 tsp black pepper powder
  • 1 tsp garlic powder
  • 2 tsp chat masala optional
  • 1 cup shredded emental cheese optional
  • 2 eggs beaten with a lil salt and pepper
  • 1 cup of water.
  • Sesame seeds and chopped coriander for topping
  • Oil for frying.

Instructions

  • In a bowl, mash the boiled potatoes.
  • Add in shredded chicken, all the spices and seasoning. Mix everything until well combined.*
  • Add in boiled vegetables and cheese and mix with a light hand so as to not smash the vegetables.
  • Do a quick taste test and adjust the seasonings.
  • Cut the bread slices into 4 equal squares.
  • Drop 1 tbsp of potato filling onto the bread squares and press firmly and evenly to make sure the filling sticks to the bread. Repeat with all the bread slices.
  • Beat eggs with a little salt and pepper and add water in it to make it thinner.
  • Warm up a frying pan at medium flame with a little bit of oil.
  • Dip the assembled bread slice in the egg wash and directly place top-up on a frying pan.
  • Sprinkle some sesame seeds and chopped coriander on the potato filling side of the bread.
  • Flip over after 5 mins or until the bread is crispy golden brown.
  • Cook for another 5 mins and plate out.
  • Serve with ketchup, or mayo or any dip of your choice.

Notes

*Use any left over chicken for this recipe. If you are going to boil chicken specifically for this recipe, just boil some in salt, pepper and garlic paste.
**Ideal mix vegetable for this recipes would be carrots, peas, capsicum, corns, beans etc. (steer clear of onions) Make sure you boil them in salt water to make sure they are cooked.
After boiling potatoes and vegetables, let them cool down, drain properly, and let them air dry for 10 15 mins so that they aren't packing any extra moisture.
You can assemble the bread with filling in advance and freeze. Just coat it in the egg wash when you are ready to eat.
