Crunchy Cashew Salad
A crunchy Cashew and vegetable salad topped with some honey mayo dressing and thin potato chips

Salad Dressing
- 2 tbsp olive oil
- 3 tbsp vinegar
- 3 tbsp honey
- 2 tbsp Mayo
- 1/2 tsp salt
- 1 tsp black pepper powder
Salad ingredients
- 2 cups red cabbage shredded
- 1 cup carrot shredded
- 1 1/2 cup chopped iceberg or any salad leaves available
- 1 cup capsicum sliced
- 1 cup roasted cashew nuts
- 1/2 cup crunchy spicy potato chips optional
In a bowl, add all the salad dressing ingredients and whisk till the mayo and oil form a homogenous mixture. (you can also dump all the ingredients in a jar and shake vigorously to do this)
Mix all the ingredients for the salad together and top it off with the salad dressing.
Best to consume immediately or within 2 days.
To make it a meal, marinate some chicken or shrimp in a simple black pepper, salt, garlic and soy sauce marination. This works best for this salad
