Crunchy Cashew Salad

Ingredients

Salad Dressing

  • 2 tbsp olive oil
  • 3 tbsp vinegar
  • 3 tbsp honey
  • 2 tbsp Mayo
  • 1/2 tsp salt
  • 1 tsp black pepper powder

Salad ingredients

  • 2 cups red cabbage shredded
  • 1 cup carrot shredded
  • 1 1/2 cup chopped iceberg or any salad leaves available
  • 1 cup capsicum sliced
  • 1 cup roasted cashew nuts
  • 1/2 cup crunchy spicy potato chips optional

Instructions

  • In a bowl, add all the salad dressing ingredients and whisk till the mayo and oil form a homogenous mixture. (you can also dump all the ingredients in a jar and shake vigorously to do this)
  • Mix all the ingredients for the salad together and top it off with the salad dressing.

Notes

Best to consume immediately or within 2 days.
To make it a meal, marinate some chicken or shrimp in a simple black pepper, salt, garlic and soy sauce marination. This works best for this salad
