Hey Susan so white biryani looks innocent but since its a South Asian dish, it is definitely a bit spicy. For the quantity mentioned, you can use 10 serrano chilies and taste it to see if you wanna add more later. You can always add chili paste at the end of the mutton curry prep, its fine if it doesnt get cook time, itll cook through when you add it to rice and steam it.
