Hey Becky, so the recipe uses only 1 cup of water. If you are being left with too much water and your meat tenderizes before it evaporates, than skip the water completely or use 1/4 cup of it. Hope that helps!

very nice sendond time of making these so thankyou my question is i allways end up with too much water then i spend over a hour boiling it down to a lush thick sauce to wipe over the mutton which is very nice but im just woundering were im going wrong lol

Hi Barney, I saw your comment on the other post so im guessing you’ve already made these! But lemme just give you my 2 cents incase. SO yes your lid needs to be covered. Anytime steaming is mentioned on the internet, the lid is covered to generate the steam. And a charcoal grill is actually perfect for the second stage of cooking!

Here in UK goat is not very common which is a great shame. I have a quick question: when steaming do you need to put a lid on the pan and also how much water should I add? Also I was thinking of cooking a second stage I’ve charcoal bbq grill, would this be ok?
