Im sorry if im answering later than you needed. But you don’t need to thaw the kebabs. IF you want to freeze them I’d suggest stir frying them for about 1 min, letting them cool down and then freeze. This helps in lock in the moisture and juices. YOu can also freeze completely raw kebabs but that might lead to moisture loss once you fry them on your desired date. But to answer your question, you can directly keep frozen kebabs on the pan and fry. no need to thaw
