I don’t drink for religious reasons. But I like the idea of something bubbly, fancy, and classy, (so of course cola didn’t make the cut). Iced teas, like my peach iced tea and other low-cal drinks, are my faaaaavorite guilty pleasure!

So naturally I was intrigued, nay, OBSSESSED with Saudi Champagne the moment I had it and naturally the next step in my obsession was recreating it at home (and nitpicking all possible soda-to-apple-juice ratio because that’s just who I am). An egg shakshuka for breakfast, a crispy Fattoush salad for lunch and a Saudi Champagne at night to unwind. My 3 greatest finds of my life here in KSA.

What is Saudi Champagne

Saudi Champagne is a “mock champagne” or a non-alcoholic beverage invented in the lands of Saudi Arabia where alcohol is not consumed on religious grounds. It’s a Muslim’s answer to alcoholic drinks. But really, anyone abstaining from alcohol (or not) is going to enjoy this recipe!

The popular Saudi Champagne is made primarily with apple juice and sparkling water. It is usually served in Arabian, Turkish and Lebanese restaurants across Saudi Arabia. The first time I had it, was back in 2016, when I had first moved to Jeddah. I was INSTANTLY taken by it and ever since then, it has become my go-to drink to order in restaurants. My close second favorite has to be the apple-cinnamon latte that I had at a Turkish food stall.

Notes on Ingredients

The ingredients in this fake champagne are super simple and easily modifiable.

  • Apple Juice – You can use store-bought or homemade juice. Just make sure the juice is pulp-free to give you that clear champagne look.
  • Sparkling Water – The original recipe uses sparkling water like Perrier, Aquafina, etc. But if you like your drinks on the sweeter side, you can also use fizzy drinks like 7up or Sprite. Or do a combo of sparkling water and a fizzy drink.
  • Ice – I love love love using itty bitty ice cubes and fancy-shaped ice cubes in my drinks. But I’d definitely recommend adding some no matter what shape you have at hand. It’ll keep your drink cooler for longer even if it sits out in the heat.
  • Infusions – This right here is what fuels the flavor train in this recipe. You’ve got sliced apples, sliced oranges, mint leaves, and a little bit of lemon juice. All these together, add flavor and gorgeousness to your champagne

How to assemble the Champagne

This is the kind of recipe that takes you 5 minutes and zero expertise to put together.

Step 1 – In a pitcher, add in all your garnishes first and apple juice.
Step 2 – Add ice and your sparkling water/soda

The final step is to stir your drink so that all the fruity goodness is mixed up and ready to be served.

ProTips

  • Use chilled ingredients for this recipe to avoid the ice from melting instantly.
  • Make the garnish and apple juice mix in advance and refrigerate. Add the sparkling water when serving. This will intensify all the flavors.
  • Always use fresh mint leaves for drinks
  • Use a pitcher with a lid if you want to avoid all the infusions from getting into the glasses.

How to Serve

  • Mint leaves: Float 1 or 2 mint leaves at the bottom of the glass or add an orange wedge on the rim of the glass.
  • Sugared glass rim: This isn’t a typical presentation for Saudi Champagne, but hey! What’s wrong with feeling a little extra? Wet the rim of your glass with an orange slice and then dip it in fine sugar.
  • Serving glass: For those authentic feels, use a champagne flute.

Recipe FAQs

Can I use any other fruit I like?

Of course! Some restaurants also add lemon slices, pomegranate, or strawberry slices in the infusion. I’ve only made the recipe with the ones that are commonly used everywhere.

What other variations can I make?

I love variations! My friend always makes Saudi Champagne with Ginger Ale along with apple juice and honestly, I love that version just as much. The basis of Saudi Champagne is apple juice and sparkling water. Everything else is up to your imagination.

Can I make Saudi Champagne in advance and store it?

So I make this drink quite frequently for my guests. I usually infuse the apple juice with all the garnishes overnight. And simply add the ice and sparkling water at the time of serving. You can still store it after you’ve added the sparkling water, but just know that it will go flat in a couple of minutes.

What can I pair Saudi Champagne with?

At restaurants, this champagne is generally served with dinner and lunches. But if you are serving this for brunch, it would go beautifully with this beef and eggplant nachos, or a street style batata harra (spicy potatoes).

Is Saudi Champagne halal?

I get this question every time I post stories of myself and my glass of Saudi Champagne on Insta. Yes, my concerned Muslim friends, Saudi Champagne is in fact halal as it does not contain any form of alcohol.

Ingredients

  • 1 Liter apple juice fresh or boxed
  • 1 Liter sparkling water
  • 1 whole apple thinly sliced
  • 1 whole orange thinly sliced
  • 13 to 14 mint leaves
  • 3 tablespoon lemon juice
  • 15 medium ice cubes
  • 330 ml of white fizzy drink (7up or sprite) (optional)

Instructions

  • In a large pitcher, add sliced oranges, mint leaves and apple slices. Squeeze lemon juice all over it,
  • Add in the ice cubes and pour apple juice first. Let it sit for 5 minutes.
  • Pour in the sparkling water or white soda. Stir around.
  • 4. Serve immediately in champagne flutes

  • You can substitute sparkling water with white soda
  • If you want, you can prepare the apple juice with the fruits overnight to intensify the infusions. Simply add the sparkling water when ready to serve

What is Pakistani Mocha Latte?

A Mocha Latte is a flavored drink that combines coffee and chocolate together. It is often confused with MOCHA, which a high quality coffee bean from Yemen.

If you’ve read my post about Pakistani Whipped Coffee, then you know the origin of whipped coffee. A Pakistani Mocha Latte is just a twist on the regular whipped coffee which is made with sugar, water and instant coffee, beaten together to make a frothy milk texture. Mocha means coffee plus chocolate. And that’s really what this recipe is! Adding a little chocolate to the classic whipped coffee! But of course this one’s warm, unlike Dalgona (read more on the differences here.)

Ingredients for Whipped Mocha Latte

  • Instant coffee powder – So if you’ve made whipped coffee before, you know it needs instant coffee. No other kind of coffee is going to work for this. You can use any brand of instant coffee.
  • Water – Warm to hot water is ideal to make the perfect whipped coffee! This is the small amount of water that you will need to whip up your coffee.
  • Sugar – You can use regular sugar or sugar alternatives as well. Sugar substitutes include: brown sugar, coconut sugar, honey and artificial sweeteners like Stevia. Keep in mind, that white sugar gives the best results but you can still get a pretty good amount of air in your coffee with sugar substitutes as well.
  • Cocoa powder / Hot chocolate Mix – Regular and Dark cocoa powder, both will work perfectly well for this recipe. I personally like making this recipe with cocoa powder, but you can use a hot chocolate mix powder instead. Keep in mind, that hot chocolate mixes are already sweetened, so you will need to adjust your sugar accordingly.
  • Cream – Mixing cream with cocoa or hot chocolate mix adds a layer of depth and smoothness to the mocha latte. You can use any cream you have at hand. Double, whipp, fresh, canned. You can also use non-dairy cream substitutes like cashew or coconut cream.
  • Milk and water (half and half) – Once your mocha coffee base is ready, you can decide what you want to pour into it. Take equal parts of hot water and milk for this recipe. You can also do full milk if you want, or 3:1 milk and water ratio as well. You can also use non-dairy options instead.
  • Chocolate (optional) – If you want to create a stronger chocolate flavor, you can even add a few tablespoons of grated chocolate in the mix. Any chocolate of your liking will work just fine. I didn’t use any this time.

How to make Desi Mocha Latte

STEP 1 – Whip the coffee

All you have to do is put almost equal parts of sugar, coffee and hot water in a mug and whip it up. You can use a milk frother to do this. If you are making a big batch, you can do the same step with an electric beater and use a large bowl instead.

STEP 2 – Make it Mocha

Now you are going to add your cocoa powder and cream into the whipped coffee and simply stir to combine. IF you want your coffee to taste more “chocolatey”, you can also add some chopped chocolate at this point. I’d suggest to go with some dark chocolate variety.

STEP 3 – Assemble

Warm up some equal parts milk and equal parts water. Pour it over your whipped mocha coffee and stir to mix well.

STEP 4 – Make it fancy

If you want, you can also add some whipped cream or marshmallows on top to give you hot chocolate feels. And then dust with some cocoa powder.

FAQS about Whipped Mocha Latte

Can I make a big batch of Mocha Coffee?

Yes, you can bulk prepare the whipped mocha coffee for a larger gathering. Just drop 2 tablespoons of mocha coffee mix in every mug when you are ready to serve, and pour your milk on it.

Can I make this Pakistani Mocha Latte into Iced Mocha ?

Absolutely. Of course that makes it Chocolate Dalgona. But besides the nomenclature, you can use cold milk and ice instead of hot milk.

How long can the whipped coffee stay in the fridge?

You can bulk prepare whipped coffee and keep it in the fridge for 4 to 5 days easy. Just make sure the bowl is covered properly with a lid or cling wrap.

How to make a lite version of the Pakistani Mocha Latte coffee

  • Use sugar alternatives like Stevia, honey or coconut sugar. Or skip sugar altogether
  • Go dairy free for cream and use cashew cream or coconut cream instead.
  • Use nut milk, oat milk or soy milk instead of regular milk
  • If you are cutting on caffeine, use the decaf instant coffee option.
  • Use dark cocoa instead of hot chocolate mix

This Ginger Lemon Iced tea is sweetened with honey and is your perfect guilt free summer drink!

The blazing sun, the whirring of the fans, and that itchy feeling you get with each sweat drop, NEEDS a cooler! Not only does an iced tea cool you down, this one is sugar free!

Iced teas have been a SAVIOUR for my soda addiction. Quitting fizzy drinks cold turkey never works cz the sugar addiction is REAL you guys. I shifted to packaged juices for a while but of course they have a truck load of sugar too. Eventually, I started drinking Iced teas, sometimes with sparkling water mixed in. And I have never looked back!

Tips to Personalize your Iced tea

  • Adapt the tea to your taste – Just as it is with regular tea, you can easily decide how strong or how light you want your iced tea to be. Brew the tea for longer, use more tea bags or use loose tea to create a stronger taste.
  • Use baking soda – Most people recommend using baking soda in iced teas to get rid of the bitterness of the tea. This recipe doesn’t need it but if you are planning on making it stronger, consider adding a half a pinch of baking soda while brewing the tea.
  • Flavors – Try different flavor variations mentioned below to create a customized iced tea for yourself
  • Ice and fruit– Always add ice and fruit to your glass rather than the pitcher, so that your tea doesn’t get water down and the fruit doesn’t break down.
  • Sweetener – I’ve used honey in this recipe to create a sugar free iced tea. You can use any other sweetener of your liking. Stevia, coconut sugar, brown sugar or regular sugar. Add more or less according to your taste.
  • Servings – This recipe creates 2 tall glasses of iced tea so the tea steeping can simply happen in a mug. But if you decide to create a large batch of this iced tea, make sure to use a heat-proof pitcher/pot for steeping the tea.

Flavor Variations and other options

  • Tea blends – Go ahead and explore different kinds of tea for this recipe. I’ve used regular Lipton black tea bags.
  • Mint leaves pair really well with the lemon and ginger.
  • Pineapple juice – Add 1/4 cup of pineapple juice to the brewed tea to create a sweet citrusy iced tea that is just delicious
  • Sparkling water – Brew the tea with 1/2 the water mentioned in the recipe and use sparkling water later to add a little zing to your iced tea.
  • Other Spices – Green cardamom and cinnamon sticks are 2 other spices that can give you a brilliant eastern spiced iced tea blend. Use them together or separately to create magic.

Ingredients

  • 3 Black tea bags I used Lipton
  • 1/4 cup lemon juice
  • 1/4 cup honey
  • 1 inch piece of ginger
  • 1 cup water.
  • 18 to 20 pieces ice cubes
  • Lemon slices

Instructions

  • Boil water in a kettle or a pot.
  • In a big mug, add tea bags and ginger. Pour boiling water in the mug
  • Dip the tea bags multiple times and let the tea brew for 10 mins.
  • Remove the tea bags, and add honey and lemon juice. Mix well.
  • Fill 2 glasses with ice cubes and a few lemon slices. Pour the hot tea over the ice cubes. Mix well and drink.

I know what you are thinking. Pakistani Whipped coffee? Is that Dalgona I am talking about? I assure you, I am not! Pakistani Latte aka Phitti hui coffee is its own version of deliciousness in a mug that you need to try today!

What is whipped coffee?

Whipped coffee is basically just coffee, sugar and water beaten vigorously to add air into the coffee. The coffee eventually turns a lighter “coffee color” and becomes fluffy and airy. You add this to your milk and water or half and half, and have a rather spectacular latte ready.

The whipped coffee goes by so many names; we’ll probably be here for another 4 minutes if I start listing all of them! The most popular one these days is “Dalgona coffee” which obviously my mom wasn’t amused by when I told her about it and here’s why. Growing up we just called it phitti hui coffee (meaning beaten coffee) since it was made by beating a spoon against a mug to give some air into the coffee.

So who is the real OG of whipped coffee?

Of course a year ago, tiktokers made whipped coffee go viral, which was basically just Dalgona Coffee, popular in South Korea. But whipped coffee has been around for wayyyyyy longer than that. It’s also known as Frappe in Greece, other than our “phitti hui coffee”. Our friends across the border call it an Indian Cappuccino. I also want to take this opportunity to mention that my mom calls it Desi coffee 😛

How is Dalgona coffee different from a Pakistani Latte

Lots of confusion around the internet revolving around this question. It’s simple. Dalgona coffee is served with whipped coffee on top of iced milk. Whereas a Pakistani latte is served as a standard warm drink by pouring milk on TOP of the whipped coffee.

Ingredients For Pakistani Latte/Phitti hui coffee

  • Instant Coffee – The whipped coffee only works with instant coffee powder. You CANNOT use the regular ground coffee because it needs to be brewed before you can have it. Lots of instant coffee brands are available these days, the most commonly found is Nescafe, which is the one I use.
  • Sugar – I’ve made this recipe with all kinds of sugars; brown, white, castor and coconut. And it works and whips up perfectly with all of them. If you are cutting out sugar from your diet, you can use a sugar alternative as well or skip it altogether. The results maybe a little different and the coffee may not whip up very stiff, but you’ll still get a decent amount of air in the coffee.
  • Water – Warm to hot water is ideal to make the perfect coffee! It can also work with cold water but it will take longer to whip up.
  • Half milk and half water – Once your coffee is whipped, you can decide what to pour in it. Ideal combination is equal parts of water and milk. You can also use nut milks instead of regular milk.

How to make Pakistani Latte

STEP 1 – Whip the coffee

All you have to do is put almost equal parts of sugar, coffee and hot water in a bowl and whip it up. You can use a milk frother to do this, or an electric beater or a stand mixer. Of Course you can go old school and use a spoon and use the whisking motion to beat air into the coffee, but I’d rather skip the arm workout tbh.

STEP 2 – Assemble

Drop the whipped coffee at the bottom of your mug. Now warm up some equal parts milk and equal parts water. Pour it over your whipped coffee and stir to mix well. Crush some instant coffee granules on top of your coffee and viola. Enjoy

You can also bulk prepare the whipped coffee for a larger gathering and keep leftover in the fridge.

Ingredients

single serving

  • 1 1/2 tsp sugar or according to taste
  • 1 1/4 tsp instant coffee
  • 1 tbsp hot water

Multiple servings (15 servings)

  • 1/2 cup instant coffee
  • 3/4 cup sugar
  • 3/4 cup hot boiling water

Instructions

Single Serving

  • Add coffee, sugar and hot water in a mug. Whip it with a milk frother, hand beater or manually with a spoon. Beat it for about 3 to 4 mins. The coffee will become light and air and create soft peaks.
  • Warm some water and milk.
  • Pour the water plus milk over the whipped coffee. Stir to mix coffee with liquid.
  • Crush some instant coffee on top and serve immediately.

Bulk preparations

  • Add coffee, sugar and water in a large bowl and use an electric mixer or a stand mix to beat the coffee. Beat the coffee for 5 to 7 mins or until you get soft peaks of coffee mix.
  • Drop 2 tablespoons of the whipped coffee into each mug.
  • Pour hot water and milk mix over the whipped coffee. Stit with a spoon. Add more whipped coffee or sugar if needed.
  • Crush some instant coffee on top and serve.
  • You can also serve whipped coffee, milk, sugar and water separately to allow your guests to create their own lattes.

Notes

  • You can use full milk instead of milk plus water.
  • You can add more sugar according to taste
  • The bulk whipped coffee can last in the fridge for upto 5 to 6 days.

This date-melon shake makes summer that much easier! Light and sweet, this nutritious drink will help you keep that temperature down. Well, internally atleast! I went back and forth between calling it a smoothie or a shake, but I’ve stuck to shake. Lemme know if this, indeed, is a smoothie.

Melons are generally mildly sweet fruits and for this recipe Muskmelon and it’s varieties are the best. With so many different types of melons out there, it can be kind of confusing which ones to chose.

Any type of Musk Melon can be used for this recipe, depending on where you live. You can use:

  • Galia melon (also known as Sarda in South Asia)
  • Cantaloupes – this is the one I’ve used
  • Persian Melon
  • Christmas Melon
  • Honey Dew
  • Casaba

Substitutions and Remixes

Ingredient Substitutes

  • Use nutmilks instead of regular milk if you are on a dairy free diet. You can also use Soy milk or rice milk if you have any nut allergies.
  • You can also skip vanilla ice cream and use Greek yogurt instead for a more low-calorie alternative.
  • You can use natural sugar syrups like agave nectar or maple instead of sugar and dates.

Spice up the Melon shake

  • Pack more nutrient by adding just a little spinach to the mix.
  • Sprinkle some roasted crushed flax seeds to add a slight crunch and nutrition to the drink
  • You can also add more flavoring to the drink by adding 1/2 tsp of cinnamon powder.

How long will the milkshake last for?

Well, if you taste it, it’ll be gone immediately! ok fine! Kidding. It can last for upto 2 days in the fridge. If you plan to drink it later, keep it in the fridge immediately.

Ingredients

  • 4 to 5 dates
  • 1 cup of cut up melon cubes
  • 1 cup of milk
  • 4 ice cubes
  • 2 scoops of regular vanilla ice cream additional 2 scoops for toppings
  • Extra Sugar or honey to taste optional

Instructions

  • If the dates that you are using are hard (like ajwa etc), soak them in boiling water for 15 mins before making the shake.
  • De-seed the dates
  • Add all the ingredients in a blender and blend till all the ice cubes are crushed.
  • Taste to check sweetness. Add sugar or honey if needed.
  • Serve in glass with additional scoops of icecream. Drink cold.

Notes

Use soft sweet variety of melon for this shake for best results.
You can keep the shake in the fridge for 2 days.

I’d love to take credit for coming up with the idea of Apple Cinnamon Latte. But the truth is I had it at an Arabian kiosk last year. They were hot mild shots of sweet cinnamony milk with a hint of apple. We came home dreaming about the drink all the way and of course I grabbed an extra cup to have some at home. 12 failed experiments later, I finally recreated the drink! And it seems only logical to share it with the rest of you.

Now, I am not sure if this drink is Middle Eastern in origin or just a drink they cooked up, so I am not going to comment on the roots of the latte. (Unlike Saudi Champagne, where the name itself tells you the origin). Or the delicious egg Shakshuka which has Midde East written all over it. But I can tell you this, its yum, its mild, its a great post-food drink for the guests in winters, and it most definitely is toddler approved (that’s coming from friends)

Let’s make the Apple Cinnamon Latte

This Latte was served to us in the form of shots so based on that, this recipe would give you roughly 4 shot glasses or 2 medium cups.

The steps are pretty basic, but a little visual aid never hurts anyone. I cooked the apples first with honey, cinnamon, coffee and water. This is done to cook the Malic acid present in apples. Adding raw apples to the milk will cause the milk to seperate.

So I cook the apples for about 10 mins or until they soften.

Then I hand blend them until I get a nice smooth apple sauce.

Next, I used a tea strainer to separate the apple pulp and apple syrup. You will get a nice brown colored liquid once you remove the apple pulp.

NOTE: I don’t throw the pulp away, in fact I use this as a face mask. It has all the right ingredients to make an awesome face mask! Read more about that here

In the sauce pan, I added milk at medium flame and whisked it a little bit to get a subtle foam going on.

Then I went ahead, and added my apple syrup and whisked it for another 2 to 3 mins at medium flame.

Once I was happy with the foam, I poured the latte in shot glasses, topped it off with some whip cream and more cinnamon.

ALTERNATES, FIXES AND REMIXES

You can make same recipe using apple or caramel syrup. In which case you can directly add all the ingredients in the sauce pan and whisk away directly. ( no need to break the recipe in 2 steps as there would be no raw apples)

All the flavors in this recipe are very subtle, if you want to overpower one, experiment and go ahead and increase the quantity of coffee maybe? or cinnamon.

Ingredients

  • 1 medium medium apple sliced and chopped or 4 tbsp of apple syrup
  • 2 teaspoon honey
  • 1/2 tsp cinnamon powder
  • 2 pinches of ground coffee granules
  • 1 cup water
  • 1/2 cup milk

Instructions

  • In a sauce pan, add apples, honey, coffee and cinnamon with water.
  • Heat the sauce pan at medium flame for 5 mins and low flame for another 5 mins.
  • Turn off the flame and hand blend the apples to form a smooth mixture.
  • Use a tea strainer to separate liquid and pulp.
  • In a sauce pan, add milk and at medium flame whisk it to form foam.
  • Add apple sauce to the milk and whisk again for 2 to 3 mins.
  • Pour into shot glasses. Top with whip cream and more cinnamon powder.
  • Serve immediately.

Notes

If you don’t plan to consume it straight away, don’t mix the milk with the apple sauce. Whenever you are ready to drink, start with step. no. 5
If you chose to use apple syrup, you can add all the ingredients directly in the sauce pan and bring them all to heat together.
